Birthday Cakes, Frostings and Icings

Birthday Sponge Cake

This is a quick and easy sponge cake recipe that tastes good too.

Ingredients

  1. 1 cup (4oz) self-rising flour
  2. 1 teaspoon of baking powder
  3. ½ cup (4oz) superfine sugar
  4. ½ cup (4oz) soft margarine or butter
  5. 2 eggs
  6. you will also need
  7. 2 seven inch round cake pans
  8. Parchment paper

Preparation

The ingredients for making this birthday sponge cake should, ideally, be at room temperature. So if you’re using butter than you may need to take it out of the refrigerator several hours before baking. Soft margarine on the other hand should be taken from the refrigerator about an hour or so before baking, this also applies to the eggs.

Cooking Instructions

First, using the same type of fat that you’ll be using in the cake, grease the inside of the cake pans. Now cut 2 circles of parchment paper, 1 for each pan - you can use a pan as a template - and then line the pan bases. Then grease the paper.

Next preheat the oven to 325°F. Then sift the flour and the baking powder into a large bowl. Now add the superfine sugar, margarine or butter and the eggs.

Then with a hand mixer or wooden spoon beat until everything is well combined - this doesn’t take long – the mixture should now be of a dropping consistency. This means that it should drop easily from a wooden spoon when shaken, if not add a teaspoonful or so of tepid water and mix again.

Now divide the mixture between the prepared cake pans and level the tops.

Then place in the oven and bake for about 25 minutes. The cakes will be firm and springy in the middle when done, if not then bake for a little longer.

Next, turn the cakes out onto a wire rack and carefully remove the parchment paper; then leave to cool. After this, sandwich the cakes together with jam or jelly, butter icing or frosting.
